Lomo (Air dried pork loin)
Awarded a Gold star in the Great Taste awards. Marsh Pig’s lomo has been gently infused in black pepper, sweet paprika and garlic for 1 week. It’s then air dried for at least 10 weeks. A labour of love that pays off with every bite.
